Thanksgiving is right around the corner so I thought I would let you in on some great recipes we have come across. Supporting your local ranchers has never been so important. Taste the difference.

Did you know there are six major prime cuts of a lamb; shoulder, rack, loin, leg and shank. Lamb should be tender and juicy when cooked properly.

Did you know that 50% of lamb consumed is the U.S.A is imported from Austria and New Zealand? Myrvik Lamb & Cattle Company lamb is local to North Dakota, it’s more fresh, non-GMO and there are no added hormones. Our lamb is more flavorful and a much better quality. Have you ever had wonderful lamb at a restaurant but might be hesitant to try it on your own? Why not give local North Dakota lamb a try?

Cooking lamb may seem intimidating to some, let me assure you it is easier than you may think. I had never eaten lamb before we started birthing and raising them. If I can do it, so can you! Cooking techniques include braising, roasting, grilling and broiling. I will recommend a cast iron skillet, low and slow heat and to be served hot.

I will leave you with one of our favorite simply ways to have lamb (kid approved); lamb meatballs. This recipe makes about 30-35 mini meatballs.

Mini Lamb Meatballs

1 pound ground lamb

3/4 cup dried bread crumbs

1 Tbsp finely chopped fresh mint

1/2 tsp ground cumin

Salt/pepper to taste

1 large egg, beaten

1/4 cup milk

1/4 tsp ground coriander

1/4 tsp ground cinnamon

Preheat the oven to 400F. Combine all ingredients in a large bowl and mix well. Shape meat mixture into 30-35 small meatballs. Place meatballs on a baking sheet and cook until lightly browned (approx. 10 mins). Serve with a vegetable, rice or mashed potatoes and your favorite dipping sauce, such as yogurt, marinara or barbecue sauce. Enjoy!
