A busy week came to a halt as the rain settled in on Wednesday night. We are so thankful for the nice rains we have gotten and also for the time to get in the fields and get some of this year’s crop planted. Now hopefully we can get a little bit of dry weather again to finish up! The picture that is included is from a sunset this week after a day of field work.

We used to make this recipe a lot when I was growing up. I think my mom found it on the back of some food box. It was a treat and I have memories of enjoying it, usually at summer picnics or at the lakes with family. You can serve it with tortilla chips or veggies, and it is sure to be a hit. Memorial day always feels like the start of summer even if the calendar says summer starts in mid-June and this is a great recipe to kick of summer!

Fiesta Dip

1 8oz pkg. cream cheese, softened

1 T water

½ cup sharp cheddar cheese, grated

1 tsp taco seasoning

1 T your favorite salsa

In a medium bowl mix the cream cheese, water, cheddar cheese and seasonings with an electric mixer on medium speed. Mix until smooth and well incorporated. Fold in the salsa and refrigerate until ready to serve. Serve with tortilla chips or your favorite veggies.

Tonight, there is a frost warning so later today you’ll find me covering and bringing in my plants! It’s nice to have the garden planted early but there always is that risk.
