I always love this time of year. The excitement of the nicer weather, the crop season starting, the rhubarb popping up, the tulips blooming and the greenhouse shopping. We started a tradition a few years ago now and we go as a family to the greenhouse to get flowers for the yard for the year for Mother’s day. This year the Dahlias were beautiful, so I got some of those along with some of the classics like Supertunias and Marigolds. I have most of them planted which is a little early, I know, but I will bring them inside if we get any danger of frost.

The recipe I am sharing this week came from my mother-in-law’s kitchen. I love the tradition that some recipes hold. One of the things I am thankful for this Mother’s day is the wisdom that my mother and mother-in-law share about things in the kitchen. From recipes, to how to can something, it is a blessing. I hope you were able to find joy in Mother’s day this year whether it was from you being celebrated or thinking about memories of your mom. This week I am going to share one last rhubarb recipe with you all…for now. I hope you have found some new recipes to try with rhubarb season starting! This recipe is definitely one of my favorite rhubarb pies and a favorite with my husbands’ family. The recipe came from my mother-in-law and it is a pretty and delicious one! She often makes it for family gatherings.

Rhubarb Custard Pie

1 9” unbaked pie shell

2 cups rhubarb, diced

2 eggs

1 cup sugar

1/8 tsp salt

1 cup evaporated milk

2 T. cornstarch

Cover rhubarb with boiling water and let stand while you mix other ingredients. Mix eggs, sugar, and salt together. Dissolve cornstarch in milk and stir into egg/sugar mixture. Drain rhubarb and stir in. Pour into pie shell. Bake at 350 degrees for 40-50 minutes or until set.
