Are you guys ready to read about all the farm happenings? We are coming into the heart of farming season and things are “waking up” on the farm. It seems so early this year but last year we had such a late spring so that is probably part of the reason. I planted tulips a few years back and they are popping through, as well as the strawberry plants. I noticed yesterday the garlic and rhubarb are popping up, too! As I was standing in the garden looking at the things coming up the evening noises and the sunset were so nice. I love living in a place where we get four seasons. It’s so much easier to feel close to God when surrounded by nature and His creation.
This week’s recipe is one that has become a favorite in our house. My kids thankfully enjoy broccoli and a frequent phrase I hear during mealtime with Beef and Broccoli is…” Can I have more steak?” When I start making this recipe, I always think it’s going to be kind of time consuming but really it comes together pretty quickly and it’s nice because like most hotdishes it is all there…. carbs, protein, and a vegetable! I hope your family enjoys it as much as we do!
Beef and Broccoli Noodles
12 oz. noodles – we like using fettuccine
1/3 cup low-sodium soy sauce
3 cloves garlic, minced
1 T Frank’s RedHot sauce
1 T honey
2 T toasted sesame oil
1 T cornstarch
¾ lb steak of choice, thinly sliced against the grain
3-4 cup fresh or frozen broccoli florets
In a large pot prepare the noodles according to package directions.
Next prepare the sauce. In a small bowl, whisk together the soy sauce, garlic, Frank’s, honey, and sesame oil. Then whisk in the cornstarch until smooth.
In a large skillet (cast iron if you have it) add a tablespoon of oil to a medium high heat. Add thinly sliced steak and cook for around 6 minutes.
Next add the broccoli and cook until the broccoli is almost tender. Add the prepared sauce and simmer for 3 minutes.
Add the drained noodles and toss with a tongs to fully coat and warm through. Enjoy!
