I think I can officially say I have spring fever. I really wasn’t there but the weather has been quite nice this year and this week I am feeling ready for warmer temperatures and the things that come with it. Gardening, crops growing and night walks and crop checks.
We took a vacation last week…and maybe that is partly why I have the spring fever. We went to the Daytona Beach, Florida area. It was a fun week with family, enjoying sunshine and the beach! It’s always fun to go but by the time the week is over I am so happy to be home. We are thankful for safe travel.
I wanted to share this recipe with you for Smores Snack mix. This is most definitely a treat! I only make it like once or twice a year because it is so sweet. It’s like having a smores without the mess… I made it to go in my kids Snackle Boxes for the trip…have you ever heard of a snackle box? Basically, a tackle box filled with different kinds of snacks. Smores Snack Mix Recipe
2 cups semisweet chocolate chips
1 T shortening
2 cups mini marshmallows
2 ½ cups golden grahams
In a small saucepan on low heat. Melt the chocolate and shortening together until smooth. Be careful to do this on low heat so as not to scorch your chocolate. In a large bowl combine the marshmallows, and golden grahams. When the chocolate is melted add to the bowl and mix.
Spread on parchment paper to cool and harden then enjoy!
