This week on TheFarmChicken I posted a sourdough discard recipe for Chocolate Chip Oatmeal cookies. I think I have made this recipe around 6 times now over the past few weeks! I was going for a certain texture of cookie, and it took some trial and error, but I finally got it after almost settling. Who knew adding sourdough discard to a cookie could create such a challenge. It’s a good thing the test batches were still good and now we have a lovely cookie freezer stash.
You can usually tell the weather by the number of eggs I have to wash. Lately with all the warmth I have had quite the abundance of muddy farm fresh eggs. One positive of having to clean the eggs is getting to see all the fun colors and sizes of eggs. Definitely one of my favorite parts! I actually found myself hoping that it would freeze in hopes of the mud not being so bad but that seems like a bittersweet thing to hope for.
I want to share a recipe with you that I came across and we really love! It is so simple and really quite good, you can also make it a couple of different ways depending on what you like best or the meat you have available to you to use. This recipe would also make a great date night meal for Valentines Day! I love at home date nights!
Korean Beef Bowls
1 lb steak thinly sliced and fried or ground beef browned
¾ cup carrot, peeled and grated
Sweet Korean Marinade:
¼ cup soy sauce
¼ cup brown sugar
2 tsp sesame oil
3 cloves garlic
¼ tsp ground ginger
Combine all the marinade ingredients into a small bowl and whisk to combine.
Once the steak has been grilled/or ground beef browned add in marinade and carrot. Cook for 2-3 minutes until warmed and well combined. Serve over rice or quinoa. We served it with avocado and enjoyed it but that is optional!
