Let’s go back to summer just for a second. We grew bell peppers, and you may even remember me talking about them some over the summer. One of the reasons we grew bell peppers is because we enjoy making fajitas. I’ll share the recipe below with you. You can use it for either beef or chicken. We enjoy either one!
We had a lot of peppers from the garden. We fertilized them and that must have been what they needed because they loved it. So, with more peppers than we knew what to do with I decided to try cutting them up and freezing them. I was skeptical that this was going to work but thought I would try it in hopes of not wasting peppers. Fast forward back to winter and I have been pleasantly surprised by how well they froze. They are not soggy and hold their shape great. I have been using them on pizza and in fajitas.
I have used the frozen peppers from the store, and they are much soggier and not as good. Let’s look at the recipe we use for fajitas. It is a pretty simple recipe and to make it even quicker you could keep a container of the seasoning blend to easily add to the meat when you want to make it!
Steak or Chicken Fajitas
2 lbs. steak or chicken, thawed and cut into strips
3 bell peppers, cut up and sliced in strips
1 large onion cut into rings
1 T olive oil
½ tsp kosher salt
½ tsp black pepper
Marinade/Seasoning:
2 T olive oil
1 tsp garlic powder
2 tsp ground cumin
2 tsp chili powder
1 tsp kosher or sea salt
1 tsp paprika
½ tsp black pepper
½ tsp red pepper flakes
In a small bowl combine all the seasoning ingredients together and then add the olive oil. Combine this with the cut-up meat and set aside.
In a medium bowl combine the bell peppers, onion, 1 T olive oil and the salt and pepper. Toss this to coat.
Next heat a large skillet, (cast iron if you have it) over medium heat. Add the vegetables and cook for 2-3 minutes before adding the steak or chicken.
Cook this for around 6-12 minutes or until steak/chicken is cooked through and the vegetables are tender.
Serve with tortillas, and your favorite toppings like cheese, sour cream, or avocado.
