I was reminded this week of the blessing that a slower lifestyle can bring. A lifestyle where you take the time and enjoy the little things that life brings. My kids are a good reminder of the blessing slowing down can be. We went to town for a while, and they were ready to go home, and I was thankful that they were. At home they just enjoy playing together(usually), enjoying the meal together as a family, helping with the animals, things like that. I am thankful for this. With the holidays approaching and the push to do “all the things” it’s important to step back and take the time to just be.
The recipe I am sharing with you all today is for Cinnamon Candied Pecans. These little cinnamon and sugar covered treats seem like they would be hard to make but really, they are quite simple. The outside is crunchy and the nut inside pairs so well with the flavors. They are tasty! Yum! These would fit perfectly on your holiday dessert table.
Cinnamon Candied Pecans
4 cups pecan halves
1 large egg white
1 T water
½ tsp vanilla extract
¾ cup granulated sugar
1 tsp cinnamon
½ tsp sea salt
Preheat your oven to 250 degrees. In a large mixing bowl whisk together the egg white, water, and vanilla. Whisk hard for 3-5 minutes until the white becomes very frothy.
In a small mixing bowl combine the sugar cinnamon and sea salt. Add the pecans to the egg white mixture and stir to evenly coat.
Next, pour half of the sugar mixture over the pecans and toss several times. Add the remaining sugar mixture and toss until evenly coated.
Pour coated pecans into a parchment paper lined baking sheet. Make sure they are in an even layer and bake.
Bake for 1 hour, stirring about every 15 minutes. Remove from the oven and cool. Place in an airtight container.
