I’m going to take a wild guess and say that you are just as excited about snow in October as I am. Really in the end we can’t change it so we might as well do the things we enjoy. Our kids enjoyed the snow fall and my oldest was so excited to make a snow angel. Our youngest just stood there and wondered what she was doing. Ha! The same night we got all that snow we got our first olive colored egg from our Olive Egger chicken. Such a pretty colored egg and a new color for our egg basket. So fun!

Fall around the house is underway. We finished working through our tomatoes, freezing, canning, and making them into salsa. I’m always excited to be done with tomatoes for the year! We finished things in the garden for the fall, too. I planted 3 varieties of garlic to come up in the spring. This is my second-year growing garlic, and I really enjoyed it last year. We use quite a bit of garlic in our everyday cooking. The chickens got their coop all cleaned out and fresh straw laid. They are always so excited for the fresh bedding!

I am going to share with you a recipe that came from my mom’s kitchen, Baked Rice. I’ve said it before, but family recipes are so great! We love having this on a cold night. It is a simple option and a treat that I usually serve with ring sausage and fruit. This last time I made it I also cooked up a buttercup squash from the garden and it didn’t even need sugar on it! It was a good vine crop year, sometimes they aren’t so sweet as they were this year!

Baked Rice

Preheat the oven to 325 degrees.

1 cup of rice boiled in 2 cups of water.

Boil this until slightly thickened, about 5 minutes.

Next, beat together and add to the rice:

3 eggs

¾ cup sugar

Dash of salt

½ tsp cinnamon

¼ tsp nutmeg (Optional)

Mix well and pour into a 3-quart casserole dish with a lid. Bake with the lid on for 45 minutes at 325 degrees. Enjoy!
