Picture this— a warm summer day with the hot sun beating down on your hat or hair and a beautiful fresh cool peach—juice dripping down your hand and chin- refreshing and oh so delicious.

I could probably just stop there, and it would leave you hopefully with a bit of nostalgia about your own peach experiences. I have officially decided that peach season and the peach itself are near the top of my favorite when it comes to fruit. It never ceases to amaze me all the beautiful foods, fruits included, that God has blessed us with to fuel our bodies well.

Every year we usually get our peaches from Youth for Christ in Grand Forks or Fargo. They do a fundraiser every year with Colorado Peaches, and they are so good. Big and sweet. It’s great because you are supporting a good ministry and also getting peaches. I call that a win, win. Do you like peaches? What is your favorite way to eat them?

We usually make peach pie during this time of year. I have made one already and hope to at least make another. I have canned peaches too, but I don’t plan to do that this year. Let’s look at what peaches are good for nutrition wise.

A cup of peach is low in fat, has around 2g of dietary fiber and is high in vitamins and minerals like vitamin A and potassium.

Classic Peach Pie

1 double crust pie crust (your favorite crust recipe)

½ cup all-purpose flour

1 ¼ cup sugar

¼ tsp cinnamon

3 T butter

7 cups peaches about 7 peaches, peeled and sliced

Prepare pie crust according to the recipe. Place half of the crust on the bottom of the pie plate and set aside. Next, in a large bowl combine the flour, sugar and cinnamon and set this aside. Peel and slice the peaches and add them to the bowl with the flour/sugar mixture. Mix well and place the peach mixture into the pie shell.

Top with little pieces of butter and the top crust. Trim the edges of the crust to about an inch and fold it under. Crimp the edges of the pie and cut a few slits in the top crust. Place in a 425-degree oven for around 50 minutes until golden brown and bubbly; watching carefully not to burn the crust. If the crust begins to brown cover with a crust shield or tin foil. Cool completely and enjoy!
