Can you believe it is already March! In some ways yes, winter tends to get long but on the other hand time goes so quickly, whether it’s cold or not! Extra daylight has been wonderful. It is nice having supper, sitting together as a family at the table, while the sun is still up/just setting. Just think in 2 months May will be upon us!

I love that farming, nutrition, baking and cooking are all related. Farmers grow food to bake/cook with and nutrition explains what benefits that food has for your body. Be on the lookout for these topics in upcoming articles. Either on their own or a fun mashup of all three.

There are four kinds of people in the world, those that buy alfredo sauce, those that make it, and those that go and order it at a restaurant. Ha! I think we can all agree that alfredo is good but did you know that it is very simple to make? I’m going to share the recipe below. You could make chicken to go with it, too, but really it is one of our quick go to meals and we enjoy it as a family with just the sauce and noodles.

Now, there are two ways you can make this recipe. One with 1 cup cream and 1 cup milk or 2 cups of milk no cream. I am going to share with you the fat difference and you can choose which way you want to make it. I would suggest at least trying it with just milk, less saturated fat by far and it is hardly noticeable at all, in my opinion, to exclude the cream. Serve with a side of vegetables and maybe bread and you have yourself a meal!

Saturated Fat Content in Recipe

1 cup cream + 1 cup 2% milk = 51g saturated fat

2 cups 2% milk = 6g Saturated Fat

Alfredo Sauce – A Recipe from the Farm

  • 1/2 cup butter
  • 2 T all-purpose flour
  • 1 tsp salt
  • 2 cups milk, we have used whole or 2%
  • 1 tsp garlic powder
  • 1/2 cup Parmesan Cheese, either shredded or grated

INSTRUCTIONS

  1. First, melt butter in medium saucepan. Add flour and salt. Stir until smooth.
  2. Add milk (if you decided you would like to use cream do 1 cup cream and 1 cup milk) to saucepan and stir frequently until it reaches a boil.
  3. Boil and stir for 2 minutes. (1 minute if using cream)
  4. Next, add garlic powder and parmesan cheese whisk until well combined and cheese is melted. Enjoy over noodles or noodles and cooked chicken!

We love having this as an easy meal. 16 oz of your favorite noodle seems to be the perfect proportion of noodles to sauce. You can check out more recipes from the farm on the blog – thefarmchicken.com.
